United States Standards for Gradesof Salmon Steaks’ 262.201 Product description.Frozen salmon steaks are clean, wholesomeunits of frozen raw fish flesh with normallyassociated skin and bone and are 2.5 ounces ormore in weight. Each steak has two parallelsurfaces and is derived from whole orsubdivided salmon slices of uniform thicknesswhich result from sawing or cutting dressedsalmon perpendicularly to the axial length, orbackbone.
