United States Standards for Gradesof Salmon Steaks’ 262.201 Product description.Frozen salmon steaks are clean, wholesomeunits of frozen raw fish flesh with normallyassociated skin and bone and are 2.5 ounces ormore in weight. Each steak has two parallelsurfaces and is derived from whole orsubdivided salmon slices of uniform thicknesswhich result from sawing or cutting dressedsalmon perpendicularly to the axial length, orbackbone. The steaks are prepared from eitherfrozen or unfrozen salmon (Oncorhynchus spp.)and are processed and frozen in accordancewith good commercial practice and aremaintained at temperatures necessary for thepreservation of the product.
